Cannabis-infused loaded potato quesadilla


– 6 large flour tortillas
– 3 cups mashed potatoes (seasoned to taste)
– 2 cups shredded cheese (cheddar or Mexican blend)
– 3 tablespoons cannabis-infused oil or butter
– 6 strips of cooked bacon, crumbled
– 1/2 cup diced bell peppers
– 1/2 cup diced tomatoes
– Sour cream and salsa (for serving)


1. **Prepare the Mashed Potatoes:** Peel and boil potatoes until tender. Mash them with butter, milk, salt, and pepper until smooth and creamy. Adjust seasoning to taste.

2. **Prepare the Fillings:** Cook the bacon until crispy, then crumble it. Dice the bell peppers and tomatoes.

3. **Assemble the Quesadillas:**
– Lay one tortilla flat on a clean surface.
– Spread a generous portion of mashed potatoes evenly over the tortilla.
– Sprinkle shredded cheese over the mashed potatoes.
– Add crumbled bacon, diced bell peppers, and diced tomatoes evenly over the cheese.
– Drizzle cannabis-infused oil or butter over the fillings.

4. **Cook the Quesadillas:**
– Heat a non-stick skillet over medium heat.
– Carefully place the assembled quesadilla in the skillet.
– Top with another tortilla.
– Cook until the bottom tortilla is golden brown and crispy, and the cheese is melted, about 3-4 minutes.
– Carefully flip the quesadilla and cook the other side until golden brown and crispy, and the cheese is fully melted, about 3-4 minutes more.

5. **Serve:** Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Repeat the process for the remaining quesadillas. Serve with sour cream and salsa on the side.
