Cannabis Infused Scrambled Eggs 🥘

There are some days when we want to take the time in the morning to make an extravagant breakfast, to sit and sip our tea, and to contemplate the day ahead of us. Most mornings, that doesn’t happen. We are often in such a rush that remembering to eat a nutritious breakfast seems like an accomplishment in and of itself!

That is why we love super easy breakfast recipes, like these cannabis infused scrambled eggs. We take this recipe up a notch by including all of our favorite veggies, some cheese and all the delicious toppings we can imagine.

Not only is this cannabis infused scrambled egg recipe filling, it’s also healing. If you utilize cannabis for daily treatment of mental or physical ailments, taking it first thing in the morning is ideal. Start your day with these tasty scrambled eggs and you’ll be ready to take on anything that comes your way.

As with any cannabis infused dish, it is important to make your cannabutter or oil ahead of time so that you can test and gauge its potency. Try a very small amount prior to including it in your recipe so you know exactly how much to use. If you need additional butter/oil, simply use a regular one in addition to your cannabis infused one.

Ingredients

  • 1 tbs of cannabutter 2 eggs 2 tbs for 4 eggs 🥚🥚🥚🥚 Cannabutter or cannabis infused oil, depending on how hungry you are
  • Optional add in’s
  • 1/4 cup chopped red pepper 🌶️
  • 1/2 tsp garlic 🧄
  • 2 small mushrooms, 🍄🍄 finely chopped
  • 2 handfuls of baby spinach or kale 🥬
  • Handful of grated cheese (can sub for dairy free cheese) 🧀
  • Ketchup, hot sauce, avocado 🥑

Directions

  1. Heat a medium fry pan over medium heat
  2. Melt cannabutter or cannabis infused cooking oil in the fry pan.
  3. Toss your chopped vegetables and sauté until slightly softened.
  4. While your veggies are cooking, crack your eggs into a bowl and whisk until frothy.
  5. Pour whisked eggs into the cooked veggies once you can smell the bell peppers Stir egg and veggie mixture with a spatula occasionally to prevent sticking.
  6. Sprinkle your shredded cheese on top during the last few moments of cooking to melt the cheese.
  7. Serve onto a plate and add your desired toppings. Enjoy!
