Ceviche with blue chips & salsa verde

Cannabis-Infused Ceviche Recipe


**For the Cannabis-Infused Oil:**
– 1 cup olive oil

– 1-2 jalapeños, seeded and finely chopped
– 1 cup cherry tomatoes, halved
– 1/2 cup fresh cilantro, chopped
– 1 cucumber, diced
pepper to taste
– Tortilla chips or tostadas for serving

Making the Ceviche

1. **Marinate the Fish:**
– In a large bowl, combine the fish and lime juice. Ensure the fish is fully submerged in the lime juice.
– Cover and refrigerate for about 30 minutes to 1 hour, or until the fish turns opaque and is “cooked” by the lime juice.

2. **Prepare the Vegetables:**
– While the fish is marinating, jalapeños, cherry tomatoes, cilantro, and cucumber.

3. **Combine Ingredients:**
– Once the fish is ready, drain most of the lime juice, leaving a little to keep the fish moist.
– Add the cannabis-infused olive oil, jalapeños, cherry tomatoes, cilantro, and cucumber to the bowl with the fish.
– Season with salt and pepper to taste.
– Mix gently to combine all ingredients.

4. **Serve:**
– Serve the ceviche chilled with tortilla chips or on tostadas.
